This dish was absolutely one of my more favorite dishes. The pork tenderloin was supposed to be seared first, but I never do that as I feel it dries out the meat too much. Instead I simply roasted it with the cauliflower. I never would have thought to sprinkle a barbecue rub over cauliflower, but my oh my it was absolutely delicious!
