Brussels & Brown Butter Risotto

It’s been a while since I’ve posted about our Home Chef meals, and for that matter it’s been a while since we’ve had new ones for me to post about!

I’ve made risotto before, and it hasn’t turned out quite right for me. I now think it’s because I’ve used traditional long grain white rice to make it, when this recipe provided arborio rice.

This recipe was very good! I think I would probably double the amount of white cooking wine next time, and also melt the goat cheese in at the same time as I add the parmesan. Other than that, I highly recommend this!!
